Addictive Carrot Cake Cookie Dough Bite

Raw ‘n nutritious- a sweet treat you can’t get enough of

Looking for any time healthy treats that are sweet delicious and also light? Look no further fellow healthy treat seekers – for we’ve found a perfect recipe for you!

Simply combine carrots, dates and walnuts with warm spices, shape into bite sized balls and dust with your favorite coating and that’s it!  

Honestly, that’s the easy part…..the challenge here is to stay away from these super tasty delights but then again, its holiday time and these treats are nutritious and lights so that makes it a tad easier, right?

So, up for the challenge anyone?

Carrot Cake Cookie Bites 2 

Ingredients you’ll need for this recipe:

Raw carrot cake cookie dough bites
Makes 28 bites

2 finely grated medium carrots (1,5 cup lightly packed)
3 Tbsp grated  coconut (30 g)
10 small dates (120 g)
Zest from ½ organic orange
100 g walnut/almonds lightly roasted (omit roasting for completely raw bites)
50 g sunflower seeds
2 Tbsp coconut oil, soft (35 g)
1 Tbsp cinnamon
½ tsp cardamom
½ tsp vanilla
¼ tsp cloves
A pinch of salt

Ideas for coating
Almond & hazelnut flour
Grated coconut
White chocolate
A little cinnamon dust


Add everything besides the carrots in a food processor and blend until you have a well mixed dough. Add the carrots and pulse until the carrots are mixed into the dough, but still has some chunky texture.

Refrigerate for 1 hour and gently use your palms to shape small energy balls. Roll the balls in whatever crunch you prefer, I used grated coconut and ground almonds.
