Colorful Cool Citrus Salad
Celebrate with a healthy raw salad
This salad is simply stunning! It’s a riot of colors on a platter, almost ornamental. An assortment of citrus fruit artistically cut just screams color-orange clementines and mandarins, ruby red blood orange, red grapefruits, pink pomelo – a citrus color platter almost too pretty to eat.
The tanginess of the citrus fruits is balanced by a drizzle of cinnamon infused maple syrup giving the salad a subtle refreshing sweetness. Citrus fruits are high in fiber, vitamins and antioxidants, making this salad healthy raw goodness on a platter.
Add a slice of lime or lemon if you want to make it look summery ‘n fresh with a few sprigs of mint or stick to warmer deep red and orange hues. Create your very own work of art on a plate and celebrate the raw vegan way.

- 4-6 pieces of citrus fruit (e.g. Navel oranges, blood oranges, grapefruit, Cara Cara, Mandarines, Clementines etc.)
- ¼ cup maple syrup (or more)
- 1 stick cinnamon
- In a small sauce pan or canteen cup, heat maple syrup and cinnamon stick for about 15 minutes. To intensify cinnamon flavor, allow cinnamon stick to steep overnight, otherwise, strain out right away.
- Peel citrus fruit and cut into ½” slices. Lightly press heart shaped cookie cutter onto a slice of citrus fruit and start carving out a heart using a pairing knife. Repeat for all other slices, arrange on a plate and drizzle with cinnamon maple syrup right before serving.
