Enjoy this healthy cheese cakes sans refined sugar, dairy and gluten…….that’s right!

Decadent and delightful are words that describe the usual cheesecake. Sadly, however, enjoying this slice of heaven leaves you feeling guilty and loaded with calories.

Not this one, though….delightful and decadent it is too and yet, it is much lighter and comes with loads of healthy goodness. This version of cheese cake is stripped of all guilt inducing ingredients and is powered with a hefty dose of nourishment with cashew nuts and zucchini.

You can enjoy this cheese cake over and over again without an iota of guilt.

Try it and you’ll be craving for more.

Vegan Raw Cheesecake 1

Overview of ingredients you’ll need:

Crust
1 1/2 cups raw pecan or walnut halves
2 tablespoons maple syrup
2 tablespoons melted coconut oil
1/8 teaspoon sea salt

Filling
2 cups raw cashews, soaked for 2 hours, drained well, and rinsed
1 cup peeled and diced zucchini
3 tablespoons freshly squeezed lemon juice
¼ cup melted coconut oil
½ cup honey
1 teaspoon vanilla extract
¼ teaspoon sea salt
