Colorful Celeriac Couscous With A Hint Of North African Flavors.

Craving couscous? Here you go…..follow this simple recipe and create an exotic bowl of goodness by replacing the grain based couscous with a plant based one.

Celeriac is a great source of vitamin K, phosphorous, iron calcium, anti-oxidants and it’s low in calories! Combined with fresh crispy peppers, warm spices and nuts , this made in minutes couscous, is full fiber and proteins.

If ‘whole’ coriander and cumin seeds is not your thing, then just bring out the mortar and pestle and spice up your raw vegan couscous.

Overview of ingredients for this recipe:

4 cups celeriac, chopped
1 bunch scallions, sliced
1 carrots, cut julienne
1 yellow or red bell pepper, cut julienne
1 small tomato, diced
juice and zest of one large lemon
1 garlic clove, minced
1/4 tsp ground chipotle pepper or cayenne
1 tsp cinnamon
1 tsp cumin
1 tsp chili powder
1 tsp coriander seeds
1 tsp cumin seeds
1 Tb sp nutritional yeast (optional)
3 Tb sp raw shelled hemp seeds
1/4 tsp sea salt or to taste
1/4 cup pistachios
